I've noticed that the PV380 does not appear to have Data Simulation included - is there any way to import this or are we required to write some simulation logic of our own?

You are correct that the monochrome displays do not have a data simulation application that is a part of the capabilities of the Murphy color displays. Any simulation will need to done in a configuration.
The color displays have more resources that the monochrome devices just don't have. As you know, there are trade offs when the resources are limited.
